KUCHING: Hilton Hotel is promoting a Baked and Grilled Night-themed buffet at its River View Cafe here.
About 37 invited guests were recently treated to a lavish array of over 200 items from appetizers to desserts and even condiments and sauces that made for a bountiful feast.
Sous chef Syed Muhammad Nazrin Wan Shalbini said the baked wagyu brisket, grilled tomahawk, baked lobster with garlic butter marinade, and Oysters Rockefeller were some of the buffet’s highlight dishes.
“People should really come and try our ‘Baked and Grilled Night’ buffet because we are using premium ingredients.
“Some of the quality ingredients we use tonight are black Angus beef for our tomahawk steak and wagyu for our salt baked brisket.
“Furthermore, our Oysters Rockefeller and baked lobster with garlic butter marinade adds more options for our guests to choose from,” he said.
Syed said the impressive menu took him and his team roughly three months to finalise after thoroughly researching on the grilled menu’s pairing with other dishes.
He said the reason why they settled for a ‘baked and grilled’ buffet theme was to let patrons taste the combination of both local ingredients cooked with modern methods.
“Normally for other themes like ‘Seafood Night’, we would focus more on Chinese cuisine but with tonight’s theme, we have more creative room to experiment with local ingredients and Western cooking.
“Like for our tomahawk, we tried marinating it with ‘gula apong’ and grilled it olive oil over a charcoal grill,” he stated.
As for Syed’s recommended food combination, he highly suggested both the garlic butter baked lobster and grilled tomahawk steak as guests can experience the Surf n’ Turf mix of sea and land.
Syed added the black Angus beef would compliment the garlic butter marinade from the baked lobster as it enhances the flavours of both items.
The Baked and Grilled Night’ themed buffet would be available until National Day in August this year.
