KUCHING: In a dynamic move within the local F&B scene, Calvin Keong, the visionary entrepreneur behind Lion City Chicken Rice, has achieved a significant milestone with the grand opening of his latest branch at Pine Square, MJC.

The new branch, which officially commenced operations in early February 2024, introduces a fresh concept to the Kopitiam chain. While maintaining the renowned signature dishes like their delectable chicken rice, this Pine Square outlet aims to captivate customers with an infusion of Sarawakian culinary delights.

Keong, 39, began his entrepreneurial journey in February 2023, driven by a personal passion for delivering delicious and healthier chicken rice dishes. His dedication to quality control and swift responsiveness to customer feedback has set Kopitiam apart in the competitive F&B landscape.

Operating as a full-time venture, Lion City has expanded its reach to Galacity, Citymall, Saratok, and Metrocity. The newly launched Pine Square branch promises an extended operating time from 9am to 9pm, providing patrons with the opportunity to savour their favourite dishes at their convenience.

“One of the key challenges addressed by me and my team was enhancing service efficiency. Recognising the need for improvement, we introduced QR Code ordering alongside traditional methods, ensuring a seamless experience for customers, including the elderly,” said Keong.

“With a commitment to maintaining the highest standards, our Kopitiam has faced challenges head-on, particularly in quality control and the procurement of goods.”

Keong’s dream is to offer “Everyday Can Chicken Rice,” emphasising the blend of deliciousness and healthiness. He envisions expanding his culinary empire while maintaining the quality and authenticity of his dishes.

“Our food price starting from RM10 for chicken rice as we served healthy rice to the customer and we also provide other dishes such as Roti Kahwin with our homemade Kaya, curry noodles, and many more.”

Keong’s dedication to utilising premium ingredients, such as Haryana Healthy Rice and Thai Fragrant Rice, has led to a slight increase in prices, ensuring a healthier and tastier dining experience.

His daily routine involves meticulous planning, from pre-ordering fresh chicken to monitoring the cooking process and overseeing stock management. His hands-on approach has contributed to the success of Kopitiam, with support from a dedicated team led by Hai, who assists in managing day-to-day operations.

The recent opening of the Pine Square branch marks a remarkable achievement for Kopitiam and aligns with Keong’s dream of expanding his brand’s footprint while delivering exceptional dining experiences.
